I Made a Cheese Bread

I've never made a cheese bread before and never read about how to do it, but I had this idea in my head. It turned out to be pretty much spot on. I just need a little more cheese next time.

This is a variation on my basic recipe. Instead of 50/50 whole wheat and unbleached white in the final mix, I used all unbleached white, and then after the pre-shaping, I rolled shredded cheddar in to the loaf. In the last 15min of baking, I sprinkled more cheddar on top. I'm quite pleased, but the next attempt will be even better.
