Basic Whole Wheat Loaf

I made a loaf of bread today for the first time in a while. I decided to start again with my basic whole wheat loaf. It turned out not half bad.

I started out making a preferment last night and putting it in the fridge.

4oz bread flour
1tsp salt
1tsp instant yeast
3oz water


Then today, I added that preferment to:

5oz bread flour
4-3/4oz whole wheat flour
1tsp salt
1tsp instant yeast
6-3/4oz water


After a 90min ferment, a 45min proofing, and a 45min stint baking at 375° I sliced it and bit in. Yum!
